Lessinia is a plateau in the Vicentine Pre-Alps, located mostly in the province of Verona and only partially in the provinces of Vicenza and Trento. Monte Veronese cheeseAlso within the mountains of Lessinia is where the Monte Veronese cheese is produced. The herd of cows used to make the cheese roam freely among these mountain pastures for a longer time compared to the grazing times of other cows. The longer duration of grazing has occurred since the beginning of the production of Monte Veronese, over hundreds of years ago, along with the use of raw milk from the cow which helps to add flavor to the cheese. There are a few types of Monte Veronese cheese that have different aging times ranging from 25 years to one year and sometimes more.
